Sticky Mango Paneer BBQ Kebabs

Ingredients

2 Tbsp Gram (chickpea) flour

225g Paneer

5cm piece of Ginger

4 Garlic Cloves

1 Tsp of Chilli Flakes

1 Tsp of Ground Cumin

1/2 Tsp Ground Turmeric

2 Tbsp Mango Chutney

2 Tbsp Tomato Puree

2 Tbsp Chopped Coriander

1 Tsp Black Pepper

1 Tsp Salt

1 Red onion (cut into chunks)

1 Red Pepper (cut into chunks)

Method:

Put 1 tbsp of oil into a pan and when hot add the chickpea flour and stir into the oil, reduce the heat and allow a thick paste to form and allow to cool

In a bowl, add the chickpea flour, paneer, spice, salt, pepper, tomato puree, mango chutney, ginger and garlic. Mix well and leave to marinate for at least 15 minutes (if longer, the better)

When ready to cook, thread the paneer, red onion and red pepper alternatively onto a skewer and cook on a BBQ for around 8 minutes. Alternatively you can put the paneer and vegetables onto an oven dish and cook in then oven at 180c for around 20 mins and serve on a bed of rice.
