Waffles!

An easy recipe for a weekend brunch - chuck it all in a bowl and off you go! I opt for buckwheat which is naturally gluten free and not irritating to the gut as well as being full of fibre and hormone-loving nutrients.

Ingredients:

120g Buckwheat Flour

1tsp Baking Powder

4Tbsp Coconut Sugar

1/4 Baking/Bicarb soda

1 egg

1 tsp of cinnamon

1 pinch of salt

1 tsp of vanilla extract

2 tbsp of melted coconut oil

180ml of almond/hemp/oat (whatever you fancy) milk

Method

Mix all ingredients together in a bowl until well combined and a thick batter is formed

Heat up waffle iron and brush with a small amount of oil/ghee/butter

Cook for 3-4 minutes until well cooked through and can remove easily from iron
